With today's food fads it's hard to navigate this crazy ever-changing culinary landscape. I believe it's important to eat what makes you feel good! I also try to support my local farmers as much as I possibly can and use ingredients that resemble their original forms. I am driven to use the fewest ingredients as possible to make something delicious. Simple food is sometimes hard to find but it shouldn't be hard to make at home and incorporate into everyday life.
CARROT GINGER SQUASH SOUP WITH TURKEY MEATBALLS
A hint of ginger awakens the natural sweetness and earthiness of carrots and squash in this easy, delicious and freeze-able soup. The turkey meatballs are livened up with curry and cinnamon making this combination a perfect dinner for a cold winter's night.

This is such a lovely soup. Fresh but somehow heavy enough to be satisfying. Lemon jazzes up this yummy broth and it's quick because you don't actually need to cook a whole chicken or cook your own stock for this recipe, you just need to save the drippings from the pan... mid - week hack? perhaps... but you'll be glad you did.
Seared salmon with thai bok choi
One of my go - to week night recipes because it's so easy and tastes like a million bucks! The skin gets super crispy but the inside stays nice and juicy. The bok choi gets a fun little re-vamp with some coconut oil, hot pepper and ginger for a little not to Thai cooking. Finish it with cilantro and you'll be wishing you made 2 filets instead of one!
Braised collard greens with navy beans
There is something so incredibly comforting in this dish that when I need a little TLC I want to eat this bowl of toothsome but soft greens and silky smooth navy beans. It feels good to eat after a ski or after weeding the garden on a crisp, cool spring day. If you feel like you need to beef this up a bit, it would be delicious over a bed of brown rice. Not paleo or Whole30 but sometimes a girl needs some beans and greens.

These flavorful chicken burgers are a nice break from a heavy beef burger, don't get me wrong, I love hamburgers, however, sometimes something a little lighter is very necessary. Packed full of veggies, this recipe is great for lunch or a light dinner... You may even need seconds.
Beef stew with baby potatoes (whole30, gf, dairy free, can be paleo)
This recipe is one my husband asks for on repeat. He always complains that I don't make enough : ) The balsamic vinegar and carrots lend a sweetness that is hard not to love and reducing the braising liquid amplifies the complexity of the dish. Can be served over baby potatoes (cooked separately) or all alone for a decadent meal of fall apart beef and rich sauce fit for a king or a Paleo
baja shrimp cakes with lime cilantro slaw
Rich shrimp and zesty slaw wake up those taste buds! This is a great weekend brunch option or a great appetizer for dinner. Flavorful and springy, these can also be dipped in gluten free panko for a nice crust or left as is for a great Whole30 option.
Cilantro chimichurri
My cilantro chimichurri is, hands down, my favorite sauce! Not a traditional chimichurri because it has no garlic or parsley, it tastes good on chicken, turkey, steak, eggs, sweet potato and squash. It awakens creamy soups and gives some zip to slaws. A very versatile and very yummy condiment, I just hope you like cilantro! It’s a Whole30 must have survival food.
