cilantro chimichurri
slather this on everthing!!!
Although not a true Chimichurri, this sauce brightens almost every food it touches and with 5 ingredients it takes 5 minutes to whip up.
½ small shallot, diced
1 full bunch cilantro, bottom 1” cut off, washed well and roughly chopped (make sure to check for dirt around the stems)
Juice from ½ of a large lemon
¼ Cup very good, extra virgin olive oil
½ tsp kosher salt, plus more to taste
Remove bottom 1” of the cilantro stems, wash cilantro thoroughly and dry in small salad spinner or roll in paper towel to remove excess water.
Finely dice the shallot, juice half of a lemon
Add all ingredients to the bowl of a food processor fitted with a blade. Pulse a few times, scrape down the sides and then blend until all ingredients are about the same size, about 20 seconds. Taste for salt, add more if desired.
