garlic free filipino adobo chicken thighs with sweet potatoes & cauliflower rice

I’ve become completely obsessed with this recipe lately. It is sweet and salty, a little zesty, totally gratifying and filling without being heavy. The chicken thighs are braised in a magic sauce until they shred and soak up that sauce… Then you spoon it over cauliflower rice and steamed sweet potatoes and finish with some lime juice and cilantro… it’s also incredible heated up for leftovers. simple braised collard greens

There is nothing better in the Winter than braised greens- they are versatile and nutritious! I often get bored of sautéed kale or wilted spinach but I never tire of collard greens. They are more substantial than other wilted greens and texturally, I think more interesting because of the meaty rib. cilantro chimichurri

This cilantro chimichurri is my go-to condiment for almost everything; eggs, sweet potatoes, squash, ground beef and chicken, to name a few. I have modified the original authentic Argentinian sauce because I cannot handle raw garlic and my husband despises parsley, I also find that lemon juice really livens it up instead of vinegar. This sauce extremely easy to make; you basically throw all 5 of the ingredients into a food processor and press pulse a few times. You won’t be sorry, Click here for recipe!

I’ve had a little extra time on my hands lately since shelter in place came into our lives a few weeks ago. I’m not usually one for dough recipes, despite my pastry arts training and years of working in kitchens, however, this one is a winner. Any no knead recipe that works is a true champion in my book, it takes a lot of the stress out of dough for me! Pizza has always been a favorite comfort food for me and being able to top it with things that I choose absolutely helps with dietary restrictions. I hope this recipe brings you a little comfort, too!

My husband would run in the opposite direction every time I would pull another bag of shrimp from the chest freezer. But alas, it has finally happened! It’s Spring, right! Ha ha. Not so much. New York City is currently getting blasted by yet another Nor’Easter, blanketing everything with a brand new layer of snow and ice. There’s something about a good snow storm that makes me think of childhood. There was a storm in the eighties where we lost power for days and I remember my Mom making beef stew by candle light. Cooking in the dimly lit kitchen seemed so adventurous to me as a six year old! Perhaps this has solidified my own personal obsession with dystopian films but it certainly has engrained a love for beef stew into my heart (and stomach) I think my Momma always dredged her beef in flour but this is really not necessary. I’ve taken a traditional winter time dish and made it even tastier and gluten free to boot! This recipe is super rich and decadent yet simple and you’ll wish you made a double batch. I don’t know about you all, but I’ve been craving greens lately. As the snow continues to fall, it seems that one would never tire of soups and stews, but alas, the time has come for me. I’ve also grown a little tired of topping my salads with baked or seared chicken breast. To remedy that I am presenting to all of you seasonally bummed out folks a super delicious salad recipe so reminiscent of Spring you may forget all about your winter coats.

It’s finally happening!!! The Farmers Market and my CSA are finally packed to the gills with fresh produce! Here in Upstate New York, we’re a little behind the times weather wise, which means that I look at NYC foodie Instagram feeds and get super jealous at how early some vegetables are available! In my neck of the woods we are just beginning to get full production of brassicas such as savoy cabbage, bok choi and broccoli, which makes me jump up and down with glee, because who doesn’t like sautéed, wilted or grilled cabbage sides? Albeit a little late (I was hoping to post this in May when it was still cold), this is the first post in a 2 part article on curb appeal and foundation plantings for your home! I'm a serious nester, mean with a paint brush and well educated in horticulture so I hope some of these stories will inspire or at least entertain you! I believe that one project generally leads to another and that the "renovation" category will inevitably be tied to many other categories, such as gardening! Variety is exciting, right?

Spring has finally sprung! Or at least it feels like it, which means, in between house and garden projects, I have been inspired by these still cool evenings to make a warming but light, spring-y soup with lots of veggies and organic chicken which is gluten free and Whole30 compliant. Having just started a Whole30 for the month of May with my Mom, I like to bulk up this soup with as many veggies as possible, , however, for those not on Whole30, this soup can totally be bolstered with a scoopful of cooked wild rice blend of your choice for a heartier version... click here to read more
